Pork Chops with Apple, Mushroom, Shallot & Thyme Relish

Apples have always been a natural partner for pork chops. Pork chops and applesauce is a classic. And since it’s a great time of year for apples, it’s a perfect time to experiment with twists on the classic. In this recipe, apples are cooked with mushrooms, shallots and fresh thyme to create a savory relish to go with the pork.

The pork chops are done in a skillet so that the juices from cooking the meat can be used in making the relish, but of course they can also be grilled. In that case, just make the relish in a skillet on the stove as directed, but add 1 Tbsp each of butter and vegetable oil before beginning to cook.  Give this a try for a light, healthy and delicious summer evening meal! (Serves 2 but can be doubled)

Ingredients:
2 bone-in pork chops, about 1″ thick
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp fresh ground black pepper
2 Tbsp olive oil
2 cloves garlic, minced
8 oz mushrooms, sliced
3 shallots, finely diced
1 apple (red, Fuji or similar variety), diced
1 tsp fresh thyme leaves
2 Tbsp balsamic vinegar

Mix together the garlic powder, onion powder, salt and pepper in a small bowl. Sprinkle pork chops with the spice mixture on both sides. Heat olive oil in a large skillet over medium-high heat. When hot, add pork chops and brown (about 2 minutes). Turn and brown an additional 2 minutes. Cover and lower heat to medium low. Cook for an additional 5-6 minutes (longer if chops are thicker) until cooked through and slightly pink in the middle. Remove pork chops with tongs or a spatula to a plate and cover loosely with foil to keep warm. Increase heat to medium-high, and add garlic and shallot and saute until shallot is softened, about 4 minutes. Add mushrooms and apples, along with the thyme. Mix well, lower heat to medium and cover. Allow to cook for 4 more minutes. Add vinegar, season with salt and pepper, cover and cook an additional 3-4 minutes. until apples are softened. Taste to adjust seasonings and serve by spooning a small amount on top of the pork chops, and serve the remaining relish on the side.

Serve this with steamed or grilled vegetables and a nice salad and you have a complete, healthy and wonderfully delicious meal.
